Discovering the Magic of Beets

Sparkling Beet Elixir one of my favorite go-to drinks and I’ve always loved the vibrant color of beets, but it wasn’t until I discovered fermentation that I truly appreciated their full potential. One day, while experimenting in my kitchen, I came across a simple beetroot tonic recipe that promised a boost of probiotics. I had been looking for ways to incorporate more fermented foods into my diet, and the idea of turning beets into a sparkling drink sounded both exciting and healthy. With just a few beets, salt, and some patience, I was ready to begin my first batch of what I would soon call the “Sparkling Beet Elixir.”

A Gentle Effervescence

The fermentation process fascinated me from the start. After chopping the beets and submerging them in a salted water solution, I let them sit for a few days at room temperature. Slowly, bubbles began to form, signaling that the natural sugars in the beets were being transformed into a gentle fizz.   • 1.5 tsp sea salt

  • Filtered water to fill a quart-sized mason jar

  • A quart-sized glass jar with a lid

  • Optional: An airlock system for fermentation
