The Inspiration Behind the Dish

That’s when Charred Beet Delight was born. The thought of grilling beets with a drizzle of fresh pesto seemed perfect for a light, healthy dish that still felt special.

  • If you want stronger char marks, make sure your grill is preheated to a high temperature. You can also lightly press the beet slices onto the grill for deeper marks.
  • If you’re making homemade pesto, try adding a handful of spinach or arugula for a twist. It adds more color and nutrients.
  • Sprinkle some crumbled goat cheese, walnuts, or even toasted pumpkin seeds on top for added texture and flavor contrast.
