  • 1 ½ cups dried chickpeas

  • 2 ½ cups low-sodium vegetable broth or water

  • Vegetables
  • 1 medium yellow onion, finely chopped

  • 1 large carrot, diced

  • 2 celery stalks, sliced

  • 1 russet potato, cubed

  • 1 small zucchini squash, chopped

  • 3 to 4 garlic cloves, minced

  • Spices and Seasonings
  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon turmeric powder

  • ½ teaspoon ground cinnamon

  • ½ teaspoon cayenne pepper (optional)

  • Kosher salt and black pepper to taste

  • Canned Goods
  • 1 (28-ounce) can diced tomatoes

  • Fresh Herbs and Citrus
  • 1 cup fresh parsley leaves, chopped (stems removed)

  • Juice from half a lemon or lime lemon juice

  • Alternative Ingredients:
  • Chickpeas: Substitute with green lentils or black beans.

  • Russet Potato: Replace with sweet potato or butternut squash.

  • Zucchini Squash: Use yellow squash or eggplant.

  • Fresh Parsley: Swap with cilantro or basil.

  • Lemon Juice: Use lime juice or apple cider vinegar.

  • Prepare Chickpeas – Rinse and soak chickpeas in water for at least 10 minutes. Drain well. Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat.
