The result was this recipe, which brings the authentic flavors of Indian cuisine into a plant-based delight.

Marinating Magic

The key to a flavorful Tofu Tikka Delight is in the marination. Pressing the tofu to remove excess moisture ensures it soaks up the marinade well. Combining thick, unsweetened vegan yogurt with a blend of freshly toasted spices creates a rich and aromatic coating. I remember the first time I marinated the tofu overnight; the kitchen was filled with the scent of cumin, coriander, and fenugreek. It was a sensory experience that promised a tantalizing dish.

  • Spice Toasting: Toasting the whole spices brings out their essential oils, making the spice blend more aromatic and flavorful. Don’t skip this step for an authentic taste.
  • Heat Control: If you prefer a milder dish, adjust the amount of Indian red chile powder and serrano pepper to your taste. You can always add more spice later if desired.
  • Smooth Sauce: For a smoother masala sauce, blend it before adding the tofu. This will give a restaurant-quality finish to your dish.

Ingredients

  • Tofu Marinade
  • 2 blocks extra firm tofu

  • 1 cup thick and creamy unsweetened vegan yogurt

  • 3 cloves garlic crushed or grated

  • ½ inch piece fresh ginger minced or grated

  • 2 tbsp lemon juice

  • 1 ½ tbsp high-heat oil (such as grapeseed oil) plus extra for cooking

  • 1 ½ tsp kosher salt

  • Tikka Spice Blend
  • 1 ½ tsp cumin seeds

  • 4 tsp coriander seeds

  • 6 whole cloves

  • ~30 black peppercorns

  • 6 pods green cardamom seeds only

  • 2 sticks cinnamon sticks 2-to-3 inch

  • ½ tbsp fenugreek leaves (optional)

  • 1 ½ tsp Indian red chile powder adjust for heat preference

  • 1 tsp ground turmeric

  • 1 tsp paprika

  • 1 tsp ground ginger

  • ½ tsp freshly grated nutmeg

  • Masala Sauce
  • 3 tbsp high-heat oil (such as grapeseed oil)

  • 1 tbsp cumin seeds

  • 6 whole dried red chilies (or substitute with ½ tsp red pepper flakes)

  • 1 large red onion or 2 small red onions, finely diced

  • 6 cloves garlic minced

  • 1 ½ inch piece ginger minced or grated

  • 1 serrano pepper diced (plus extra for garnish if desired)

  • ½ tsp ground turmeric

  • 1 tsp Indian red chile powder adjust for heat preference

  • ½ tsp ground coriander

  • 2 tbsp tomato paste (optional)

  • 1 lb tomatoes diced

  • 1 cup cilantro stems finely chopped and leaves reserved for garnish

  • 3 tbsp water

  • 1 ½ tsp kosher salt (plus more to taste)

  • 1 tbsp garam masala

  • 2 tbsp fenugreek leaves (optional)

  • 1 can full-fat coconut milk

  • 1 tbsp vegan butter

  • 1 tbsp lemon juice (plus more to taste)

  • For Serving
  • Cooked white rice or flatbread (such as naan or roti)

  • Vegan yogurt for topping (optional)

Directions

  • Press the tofu using a tofu press or by wrapping it in a clean dish towel and weighing it down with a heavy object for 20-30 minutes. Tear the tofu into medium-sized chunks and place them in a large bowl. Toast cumin seeds, coriander seeds, cloves, peppercorns, cardamom seeds, cinnamon sticks, and fenugreek leaves in a medium frying pan over medium heat until fragrant and browned (2-3 minutes). Cool and grind the spices using a spice grinder or mortar & pestle. Mix with ground chile powder, turmeric, paprika, nutmeg, and ginger.Tofu Tikka Delight_ post 1
  • Combine the spice blend with vegan yogurt, garlic, ginger, lemon juice, oil, and salt in a medium bowl. Pour over tofu chunks and gently coat them. Cover and refrigerate for at least 2 hours. Preheat oven to 500°F with a cast iron skillet inside. Once hot, transfer skillet to stove and turn broiler to high. Lightly coat skillet with oil and add marinated tofu.   • Heat oil in a deep sauté pan over medium-high heat. Add cumin seeds and cook for 1 minute. Add dried chilies and cook for another 30 seconds. Add onions with a pinch of salt and cook until golden brown (6-8 minutes). Add garlic, ginger, serrano pepper, turmeric; cook for 1 minute.   • Add diced tomatoes and their juices; cook until softened (2-3 minutes). Add cilantro stems, water, and salt; bring to a simmer and cook covered for 15 minutes until liquid reduces. Remove dried chilies. Stir in coconut milk, garam masala, vegan butter, and crushed fenugreek leaves. Increase heat slightly and combine well.
