    • If you like a bit more heat, add a touch of cayenne pepper or a few dashes of hot sauce to the mushroom mixture.

However, Au Jus should not be too thick and should just be enough to drizzle from the back of the spoon. Reducing the AU Just can result in more concentrated flavors that can overcome your dish.

    • 1 cup vegetable stock

    • 1 tbsp tamari or soy sauce

    • 1 tbsp vegan Worcestershire sauce

    • 1/2 tsp dried thyme leaves

    • 1/4 tsp liquid smoke (optional but recommended)

    • 1/4 tsp freshly ground black pepper

    • For Serving
    • 4 sandwich rolls or baguette sections (6-inch each) sliced open

    • Horseradish mustard to taste

    Directions

    • Caramelize Onions – Heat 1 tablespoon of olive oil in a large nonstick pan over medium-low heat. Add the sliced onions and stir to coat with oil.     • Sauté Mushrooms – In the same pan, add another tablespoon of olive oil and increase heat to medium. Add the mushroom slices in a single layer without overcrowding (work in batches if necessary). Cook until lightly browned on one side, about 5 minutes.
