Vegan Eggplant and Hummus Flatbread
I love pizza night. It's when my family gathers, throws whatever we find in the fridge on some dough, and watches a Marvel movie—our favorite being “The Avengers.” It's super fun, but I've been thinking about making our pizza nights healthier.
My favorite Avenger, Captain America, whenever I see him on the screen looking strong and healthy, really inspired me. I thought, “Why not try to eat a bit healthier to maybe feel as good as Captain America looks?” That's when I came up with the idea for a Vegan pizza, Eggplant and Hummus Flatbread. It was my way of keeping the pizza spirit alive while adding a healthier twist.
I experimented in the kitchen, combining the creamy, rich taste of hummus with the hearty texture of roasted eggplant, and created something both delicious and nutritious. It quickly became a new favorite at home and our go-to flatbread whenever we do pizza night.
