Discovering the Perfect Summer Treat

My Favorite is Creamy Berry Popsicles and I remember the first time I made Creamy Berry Popsicles on a hot summer day. It was one of those sweltering afternoons where the sun blazed down relentlessly, and every inch of my skin felt like it was roasting. I wanted something refreshing and cool, but I also wanted it to be healthy. As I looked through my kitchen, I spotted a bunch of ripe bananas and a medley of mixed berries in the fridge. That’s when it hit me—why not make some popsicles? It seemed like the perfect way to beat the heat and enjoy a treat that was both delicious and good for me.

Blending Up a Refreshing Delight

I got to work, tossing the bananas, berries, and coconut milk into my food processor. As the blender whirred, I could already tell this was going to be something special. The vibrant colors of the mixed berries swirled together with the creamy texture of the banana and coconut milk, creating a beautiful and inviting mixture. I added a couple of Medjool dates for a hint of natural sweetness and blended until the mixture was smooth and luscious. Freezing for a Cool Surprise

Pouring the berry mixture into my popsicle moulds was a satisfying experience. I filled each mould carefully, making sure there was just enough room at the top for the popsicles to expand as they froze. After placing them in the freezer, I had to be patient—a whole five hours! Every now and then, I’d peek into the freezer, eagerly anticipating the moment when these popsicles would be ready. It was like waiting for a cool reward after a long day.

When the popsicles were finally ready, I pulled them out with a mix of excitement and impatience. They slid out of the moulds perfectly, revealing their creamy, berry-filled goodness. The first bite was nothing short of a summer dream—creamy, fruity, and perfectly sweet. They were a hit with everyone, from kids to adults. Sitting outside with a popsicle in hand, I felt a sense of accomplishment and pure joy. It was a simple treat, but it made the hot summer days a little more bearable and a lot more delicious.

Chef’s Notes-Creamy Berry Popsicles

  • Use very ripe bananas for a naturally sweet and creamy base. If your bananas are not quite ripe, you can speed up the ripening process by placing them in a brown paper bag.
  • Feel free to mix and match your berries based on what’s in season or available. Blueberries, cranberries, or even a blend of tropical fruits can add exciting flavors.
  • If you prefer a sweeter popsicle, start with one Medjool date and taste the mixture before adding more. You can always add more sweetener but can’t remove it once mixed in.
  • For an ultra-smooth texture, strain the mixture through a fine-mesh sieve to remove any berry seeds before pouring it into the molds.
  • To make the popsicles easier to remove from the molds, briefly run warm water over the outside of the molds before pulling them out. This can help loosen them without melting the popsicles.

  • 1/3 cup purified water

  • Optional: 1-2 Medjool dates for added sweetness

Directions
